SOMM Opens at HK’s The Landmark Mandarin Oriental

Ideally suited for corporate entertaining, and located adjacent to the all-new Amber restaurant, The Landmark Mandarin Oriental, Hong Kong has opened SOMM, an informal restaurant featuring French neo-bistro fare and the city’s widest selection of champagnes, wines, and sakes. At SOMM, Chef Mario Paecke, former Sous-Chef at Amber, prepares a concise seasonal menu that pays homage to the seasons.

Playful, subtly-lit interiors by New York designer Adam D. Tihany reinforce the restaurant’s refined, relaxed mood. A sculptural, walnut wood-paneled restaurant, reminiscent of the shape of a wine barrel, sweeps across the ceiling complementing the plush, wine-hued banquettes. Custom-designed tables are fitted with cutlery drawers while the walls are lined with premium wines and rare sake.

A passionate team of sommeliers, led by the hotel’s wine director John Chan, serves European classics from the finest vintners and bold New World wines along with champagnes and a selection of exclusive, rare and refined sakes rarely seen outside Japan.

From breakfast and lunch to dinner and a postprandial cocktail, SOMM is ideal for diners seeking European-style cuisine and a carefully curated range of wines and sakes to perfectly complement the experience.

“Think of SOMM as a French Neo bistro using predominantly Japanese Ingredients focusing on delicious flavours,” says chef Mario.  Signature dishes include Tasmanian Salmon Confit, Ikura & Vinegared Rice Cream; Crispy White Asparagus and Tarragon Sabayon; Grilled Japanese Pork, BBQ Sauce, Hakata Cabbage Salad; and Raspberry 1000-Feuilles, whipped pepper berry ganache.
