Ritz-Carlton Teams up with Pierre Herme for Tea

Doing business well often means spending a lot of time wining and dining clients. This August, The Ritz-Carlton Hong Kong is giving business travellers a sweet new way to win clients over with an exclusive afternoon tea by renowned French patissier Pierre Herme.

The indulgent Pierre Herme Paris Satine Afternoon Tea will be available at The Ritz-Carlton’s Cafe 103 from August 3 – 31, and showcases a delicious array of sweet and savoury treats inspired by Pierre Herme’s famed ‘Fetish Satine.’

One of Maison Pierre Herme Paris’ signature creations, Fetish Satine is a collection of pastries that combine passionfruit, orange and cream cheese. Evoking the warm scent of summer, the refreshing, tangy aromas of the fruits are enhanced by the addition of cream cheese. By blending the three ingredients, Pierre Herme has struck a perfect balance between sweet and tart.

For the first time in Hong Kong, gastronomes will have the chance to sample six different desserts from the Satine collection, including the ‘Chou Satine,’ created with a passionfruit crumble, orange marmalade, passionfruit and cream cheese marscapone, and crunchy shortbread pastry. Other highlights include the ‘Emotion Satine,’ which features passionfruit compote, seasoned orange pieces, cream cheese and shortbread pastry; and the ‘Cake Satine,’ a reinterpretation of the classic pound cake, enlivened with orange zest and the aromas of passionfruit.

To complement the delicious treats, The Ritz-Carlton Hong Kong’s executive chef, Peter Find, has also designed three savoury snacks. Light, smooth lemon curd gives homemade smoked salmon a well-balanced dose of freshness, making every bite of the ‘Dark Rye Bread Sandwich with Smoked Salmon’ a treat. In the ‘Carrot Bread Swiss Roll with Seafood Mousse and Crab Roe,’ the crab and prawn mousse complements the savoury crab roe and creates an interesting contrast in texture. Orange juice and orange zest add a hint of tang to the egg salad of the ‘Brown Bread Sandwich with Orange Egg Salad,’ giving it a full flavour profile.

To complete the experience, guests can pair the tantalising treats with Pierre Herme’s custom-blended Satine tea, flavoured with aromatic passionfruit and orange.
