Shore Hospitality, operators of several leading restaurants across the Fragrant Harbour, has opened Hunter, the first of two bold new dining concepts occupying the space formerly housing the group’s iconic steakhouse Shore.
Modern yet elegant, Hunter is dedicated to the marriage of timeless cooking techniques, sophisticated interiors, and the use of innovative and rarely-encountered ingredients.
Located at L Place in Central, Hunter is a modern elevation of the traditional steakhouse. Here, Executive Chef Felipe Lopez, a California native, serves up dishes that not only showcase the relationship between game and cuisine but also capitalise on the group’s network of producers to source ingredients that rarely make appearances on Hong Kong menus.
Alternative cuts of meat, from grass-fed bison to rabbit are core to the Hunter dining experience, with chef Lopez using imagination and precision to deliver a captivating culinary encounter. The result is a dining experience that challenges conventions and is rooted in tradition while being unapologetically contemporary.
Highlights include sashimi geoduck with zesty lime and yuzu; potted rabbit confit with duck fat, orange zest, and pickled root vegetables, served with crispy sourdough; bison tartare laced with a spicy aioli and shaved forest mushrooms; short ribs with house-fermented pickles; forest mushroom-rubbed hanger steaks; rotisserie chicken with grilled lemon, and, for when you’re looking to impress clients and colleagues, a whole roasted pig’s head, which is prepared for five days before being served with house-made slaw, horseradish crème fraiche, and a ginger sauce.
Hunter is more than just great food. Interiors in rich green leather, timber, and brass by award-winning Aussie designer Samantha Eades offer a chic, gentleman’s club ambience that’s further enhanced by deep-set booths, leather banquettes in caramel brown leather, and subtle Art Deco accents. However, instead of being stuffy, the design delivers a sense of space and harmony.
