CÉ LA VI Opens in Hong Kong

The stunning new venue has been conceived by Hong Kong design firm AB Concept and styled to represent a tropical rainforest allowing guests to escape to a magical world away from the concrete jungle below. Motifs of the Southeast Asian-themed landscape occur throughout the venue, using shadow and textures to masterfully create a seductive, intimate and sensual atmosphere.

Stepping into CÉ LA VI Restaurant, guests are greeted by an open kitchen crewed by an international team of rising culinary stars. The soul of the restaurant, located on the lower level, lies in the dramatic custom-designed green chandeliers overflowing with exotic plants and wall sconces filled with greenery and mother of pearl flower pots.

At CÉ LA VI Hong Kong, diners will be introduced to bold and composed modern Asian flavours, all brought to life with the precision of masterful technique and artful visual appeal. With strong influences from all over Asia, CÉ LA VI Hong Kong is inspired by local cuisine elements that have morphed into dishes that pay tribute to various Hong Kong staples. The Foie Gras French Toast is fast becoming a unanimous hit with delicate pieces of pan-fried foie gras nestled atop a fluffy brioche drizzled in umeshu maple glaze. The Mango Pudding is Executive Pastry Chef Jason Licker’s love letter to the vibrant city’s favourite dish; a masterpiece of deconstructed textures of mango and milk which provides unexpected combinations, contrasting textures and flavourful ingredients.

Strong emphasis is placed on freshness and quality, as the menu changes with the seasonal ingredients. Produce from any and every corner of the world is brought in fresh and chilled, including tuna air-flown from Boston, crab from the waters of Alaska and fresh cuts sourced from Hokkaido.

In addition, CÉ LA VI Hong Kong has an award-winning Mixology programme, helmed by Knut Randhem and Fabien Marcault. Swedish-born CÉ LA VI’s Regional Head Mixologist Knut Randhem has spent over 10 years honing the art of bartending including the Bella Sky, Copenhagen’s most reputed hotel and “Ourselves Alone” bar, rated Europe’s top 50 bars, and most recently judged the Diageo World Class Thailand 2014. Meanwhile, Bar Manager Fabien Marcault has polished his craft at several of the most iconic and award winning nightspots in London and Hong Kong. Together, they have worked on an array of cocktails that are attuned to Asian climes and befitting of the pinnacle of Lan Kwai Fong.

CÉ LA VI Hong Kong’s signature cocktails include This is the Life, composed of pear purée, hibiscus water, rosehip cordial, peach liqueur and an extravagant splash of bubbles. The Bloody Old Fashion is a fiery take on the classic with Michter’s rye bourbon, Frangelico, dash of aromatic bitters, chilli and cashew syrup and topped with freshly squeezed blood orange. Also on the signature cocktail list are CÉ LA VI’s international favourites, the Storm Cooler and the CÉ LA VI Negroni, which have taken Singapore by storm at the club’s sister venue.

The beverage list features only the most premium spirits, starting with a benchmark of the best housepours Hong Kong has seen, such as Louis Roederer Brut Premier from the makers of Cristal champagne, Grey Goose, Tanqueray 10 and Macallan 12 years. Look forward to an extensive rum selection spanning from Cuba to the Philippines and a saké cocktail list featuring CÉ LA VI’s own branded saké.

The mixology scene of the CLub Lounge is complemented by state-of-the-art lighting, D&B audio technology and a team of resident DJs.
