Reflecting the culinary essence of the Tang Dynasty and known for its classic yet timeless Cantonese dishes, the two Michelin-starred restaurant T’ang Court restaurant at the luxury Langham Hong Kong has heralded a new age of astronomic dining with an exclusive new Biodynamic Wine and Dine Menu.

The restaurant’s acclaimed executive chef Kwong Wai Keung has curated a six-course gastronomic journey that marries iconic Chinese flavours with a selection of boutique biodynamic wines from Slovenia’s Movia Winery, all of which that have been harvested according to the position of the planets.

Slovenian wines take their cues from Slavic tradition but are also influenced by Austrian and Italian viticulture. The vines of Slovenia are among the oldest in the world and Movia Winery has taken the wine making process to the next step, refining the wine making process through biodynamic farming, a philosophy that emphasises holistic development and the interrelationships of soil, plants, animals and farmers as a whole. Hoping to grow their crop in harmony with external energies, farmers grow and harvest their grapes according to the natural alternation of astrological influences and lunar cycles. This elevation from traditional organic farming is believed to improve both the taste and nutrition value of the wine produced.

At T’ang Court the culinary journey features the likes of chilled sliced abalone with jelly fish, barbecued pork and sliced cod fish with lemon and honey, paired with a 2005 Puro Rose wine; the restaurant’s award-winning stir-fried lobster with spring onions and shallots matched with a 2012 Sauvignon; and stir-fried sliced pigeon with goose liver pate and water chestnuts, paired with a 2009 Pinot Nero. Baked Blue Point oysters with port wine and Alaskan crab meat with “Tianjin” cabbage are paired with a delectable 2011 Sivi Pinot Ambra; while stewed noodles with shredded chicken, fish maw, ginger and spring onion are complemented by a robust 2007 merlot.

The experience is complemented by fine biodynamic Chinese teas, including the 2015 Lion Peak Dragon Well West Lake, a rare green tea that is only harvested three times a year, which are designed to help digestion and cleanse the palate for each course.
