Swissôtel Sydney Unveils Multi-Million-Dollar Transformation 

Following a multi-million-dollar transformation, the Swissotel Sydney has unveiled its new lobby bar Arches on Market, and stunning Euro-inspired rooftop pool.

Guests at the central Sydney hotel can now ascend from Market Street to level 8 to discover Arches on Market, a vast and glamorous foliage-filled space, that embraces nostalgic hospitality and old-school charm.

Arches is reminiscent of the grand palm court bars of yesteryear, where people would come together to dine, drink, and relax. The design is influenced by the beauty and grandeur of the existing 1930s architecture of the lobby, with its Commercial Palazzo-style facade and scalloped entry awning.

Three dramatic double-height arches accentuate an elevated 8-metre-long Irish green Calacatta marble bar, and large black detailed glass pendant lights hanging overhead add a modern touch. Bespoke booths, bar stools, relaxed lounge seating and a dining area set along the Market Street windows, offer a variety of dining styles. The colour palette of mustard yellow branding and complementing green seating contrast perfectly with the surrounding white atrium. Custom illustrations by NYC artist and illustrator Eliza Fedewicz adorn menus and coasters, adding whimsy and old-world Euro charm.

On the menu, designed by award-winning executive chef John Giovanni Pugliano, contemporary interpretations of classic bar snacks give nostalgic comfort. Petite Finger Sandwiches, Arches Prawn Cocktail, and Maison Pork Terrine are the perfect finger food. For something more extravagant try the Sturia Caviar Oscietra or signature Mandarin Cheesecake. The cocktail menu has been curated by Aaron Shuttleworth, co-founder of the Antipodean Hospitality Company, who brings extensive experience across multiple award-winning sites around the world.

A refined offering of classic cocktails will transport guests to halcyon days, with distinctly modern techniques drawing you back into the present. The Spring Club Sour, Swiss Cobbler and New Fashioned will have you calling for a second, whilst the signature Arches Martini is served straight out of the freezer, garnished as you like it. The wine list has been developed by Harry Letho, a respected wine consultant who worked as part of Merivale‘s sommelier team at the Ivy precinct. Arches wine list has an Australian focus with a mix of staple high-quality producers and select smaller producers who have excellent wines of great quality. The Coravin list allows more interesting, exclusive, and premium wines by the glass, such as the 2020 Cullen ‘Diana Madeline’.

For hotel guests, the new pool deck has been designed to create a hidden sanctuary in the middle of the CBD. This urban oasis reflects the subtropical climate of Sydney and is inspired by long, hot European summers. Alfresco fare and refreshing cocktails from Arches can be ordered and enjoyed poolside, on stylish built-in cabanas, plush day beds and relaxed booth dining. Simple and chic white surrounds contrast with elegant emerald green soft furnishings, providing a calm and tranquil space
