At Tran Dynasty, soon to welcome discerning palates, celebrity chef Luke Nguyen presents a contemporary interpretation of Vietnam’s culinary heritage, balancing refined flavours with thoughtful design. Bacco, led by Michelin-recognised chef Nicolas Isnard, brings a confident Italian sensibility, showcasing authentic Mediterranean flavours from day through evening. At its heart, an open kitchen commands the room: flames leaping, pans singing, and sharing plates sweeping across the floor. Table-side flourishes bring theatre to the meal: pasta tossed in a giant cheese wheel; sauces finished with a fragrant final shave. Service here is ritual, celebration and performance.
