Chef Mauro Colagreco’s Côte Arrives at Capella Bangkok

Capella Hotels and Resorts has introduced the culinary artistry of Mauro Colagreco to Thailand for the first time with the opening of French and Mediterranean restaurant Côte at Capella Bangkok.

The multi-award-winning chef brings a “Riviera to the River” concept to the new Bangkok hotel that embraces seasons, colours, textures and flavours as it takes its inspiration from two of the world’s most desired destinations.

Produce is sourced day-by-day, creating a personal dining narrative for guests, highlighted in a nightly nine-course ‘Carte Blanche’ dining menu. This unique experience starts with pre-dinner small tasting plates and cocktails in the show kitchen before a seasonally-inspired menu is presented and followed by digestives at the Green House, where the hotel grows over 100 specialist herbs for use in the kitchen.

Italo-Argentinian Mauro Colagreco is Chef Patron of restaurant Mirazur, his celebrated dining destination on the French Riviera. In 2019 the Mirazur was voted number one in the world at The World’s 50 Best Restaurant Awards and awarded three Michelin stars.

All dishes at Côte will be uniquely designed for the restaurant with just the philosophy transported from Mirazur – evidenced by the monkfish ‘a la cacciatora’ whereby the dish marries the sea and land in a recipe that typically uses chicken.

Thai ingredients and techniques will be infused into a menu featuring ginger, lemongrass, kaffir lime and pomelo, with a pestle and mortar central to creating sauces – just as it is in French Riveria and Italian Liguria cuisine. The collaboration will see Chef Mauro work closely with Capella Bangkok’s own culinary team – Executive Chef, Anthony Scholtmeyer, Chef de Cuisine, Marc Vasseur and Chef at Côte, Davide Garavaglia, a former Chef de Cuisine of Mirazur.

It is as simple as that,” says Chef Mauro. “The passion for food and the culture and spirit – from the innate understanding of nature and the seasons to the history and flow of the river made this just the perfect place. Bangkok is an inspiration, as of course is the Riviera. Between them we will create a magical new dining destination, of that I am sure.”

Côte is located on the riverbank in Bangkok’s historic Charoenkrung district, an alluring urban enclave that has welcomed new settlers – including many intrepid French and Italian travellers – to Thailand for centuries, and it remains a rich melting pot of race, religion, culture and cuisine today.

Capella Bangkok features 101 stunning suites and the city’s first riverfront villas. Its design deeply honours the heritage of Bangkok’s first commercial outpost and guests are guided through its hidden corridors and avenues to provide an engaging and unforgettable experience.
