Finnair will collaborate with chef DeAille Tam to bring modern and fresh Chinese flavours for its business class customers travelling on all Finnair routes from Greater China to Helsinki.
Chef Tam has designed a series of dishes, which will be served exclusively in Finnair´s business class on all long-haul flights from Greater China to Helsinki as of December 5, 2019 (read our review of Finnair business class from Hong Kong to Helsinki here).
DeAille Tam, who was born in Hong Kong, is an award-winning chef, whose work has taken her to top restaurants on three continents. She was the first female chef in China to receive a Michelin star and has created culinary experiences for several international brands. The tasty dishes created by DeAille form a modern Chinese-inspired menu where East meets West in a delicious, fresh form.
“One of my passions is to bring Chinese cuisine to a broader audience,” says Chef DeAille Tam. “My mission is to give people an experience when they eat, a memory to keep. I think the aircraft is a perfect place for this.”
The first menu will feature two dishes by chef Tam, a starter and a main: drunken prawns with tomato gelée, peas, taro crisp, and garlic crema; and ribeye steak with black pepper jam, caramelized honey, pickled Chinese pepper, sweet potato and watercress sage.
Finnair began its Signature Chef program in 2013 and has since worked with a series of acclaimed chefs from Finland, Japan, China, Korea, and the United States, who have all created their own Signature Menus for Finnair’s business class.
Finnair currently operates to seven major airports in Greater China: Beijing Capital, Beijing Daxing, Shanghai, Nanjing, Guangzhou, Xián and Hong Kong.
