Joining the ranks of Hong Kong’s establishments in the heart of Central, Dr. Fern’s Gin Parlour, a hidden speakeasy housed within The Landmark, offers business travellers the perfect daytime drink or a soothing evening cocktail after a long day at work.
Inspired by Dr. Robben Fern, an eccentric physician, this Gin Parlour pays tribute to his undying love for the study of botanicals. His passion for nature has led him to open a Gin Parlour where he soothes his patients’ ailments and stress-related symptoms with his personal concoctions of fresh local herbs and botanicals paired with Gins. Dr. Fern sources local and organic ingredients whenever possible for his supply pantry, and works with local organic farms across the city to bring a fresh experience to his Gin Parlour.
During the day, Dr. Fern’s Gin Parlour is the perfect venue for a business meeting or a social gathering. Guests can sip on organic tea and coffee options, sustainably sourced from various parts of Australia. Premium tea brands, such as Providore Tea and T Totaler Tea, are represented at Dr. Fern’s with each cup aiding guests to relax, detox and receive an immunity boost. The brews at Dr. Fern’s are prepared with carefully-selected beans from the brand Dimattina Coffee, and are available for takeaway.
Transforming into a luxurious setting during night-time, the speakeasy bar will serve exquisite cocktails that are changed daily depending on the organic ingredients sourced, accompanied by snacks such as Charcuterie and Cheese Plates, to be enjoyed with music from Gin Parlour’s vinyl DJ booth.
Leading the team behind the bar is Gerry Olino, the former head bartender of the Island Shangri La’s Lobster Bar. The only bar in Hong Kong to carry the extremely rare Blind Tiger Gin, Dr. Fern serves cocktails that exude a variety of flavours, from fruity to spicy and confectionary to citrusy.
With an innovative and original approach to making gin and tonic, the bar also provides suggestions for gin and tonic pairings, which include the Blind Tiger Gin and Fever Tree Tonic, garnished with grated lime and rosemary; as well as the G’vine Floraison Gin and Fentimans Tonic garnished with green grapes and doctors prescribed botanical, offering gin connoisseurs the ultimate gin and tonic experience.
