Chef Philippe Orrico of Hong Kong’s Michelin-starred ON Dining will introduce a range of new savoury and sweet plates using Alba truffles this October to celebrate the truffle season.
Moving away from his traditional beef tartare, the celebrated chef will offer a Hamachi carpaccio, a creative dish served with parsley jus and noisette butter, and topped with sprinkles of white truffle.
Highlights of the new dishes include the egg raviolo cooked in mushroom bouillon and served in a rich parmesan cheese sauce with shavings of white truffle; the homemade sea urchin tagliolini features premium uni, lobster and generous shavings of white Alba truffle.
First for the restaurant, ON Dining’s dessert menu includes a decadent delight with white truffles. The ricotta mousse with praline, praline sauce, and white chocolate, is presented with homemade vanilla ice-cream and generous slices of the coveted Italian funghi. www.ontop.hk
