Hong Kong’s Newest Cocktail Bar, The Old Man, Opens in Central

Paying tribute to Pulitzer Prize-winning author Ernest Hemingway, new cocktail bar The Old Man has opened on Aberdeen Street in Central, Hong Kong.

The new speakeasy offers a range of innovative Hemingway-inspired cocktails created by renowned mixologist Agung Prabowo, who was named one of 10 Top Bartenders in Hong Kong 2017 by Drink Magazine Asia.

The new bar’s cocktail menu, inspired by Hemingway’s libations of choice, includes The Little Wax Puppy, which shows a softer side of the famed novelist. A mixture of beeswax infused Michter’s Small Batch Bourbon with eucalyptus honey and bitters, this creation portrays a side of Hemingway known by few. The Papa Doble is a cocktail with pineapple sous-vide rum, pink grapefruit, lime, and maraschino sous-vide jalapeno.

A list of seven “Best of the Old Man” mixes titled after Hemingway’s classics includes The Sun Also Rises, which inspired the tropical concoction of coconut oil fat-washed applejack, curry leaf-infused gin, sweet vermouth sous-vide pandan leaves and lime kaffir. The Green Hills of Africa is a combination of rosemary-infused Pisco, turmeric, and tamarind cordial and citrus, making for a refreshing treat. For a blend of sweet and tangy flavours, The Snows of Kilimanjaro mixes marshmallows gin with lacto-fermented raspberry, citrus, and gruyere.

“We are delighted that our dream has now come true with the opening of our first-ever bar in Hong Kong, a product of hard work with my two partners and ‘Old Men’, James and Roman. We have always talked about our own bar – something that is fun and reflective of our age. Hence, The Old Man was born,” says Agung Prabowo.
